Their vines are painstakingly pruned to produce unheard-of low yields, even for the Loire Valley. Ageing in 100% new oak barrels--from an exclusive regional barrel-maker using only Allier oak--softens the more aggressive characteristics of the 80+ year-old Cabernet Franc. Minimal racking keeps the wines pure and dense.
