Open Now is an ideal burger wine, deep red with a spicy kick, thanks to its blend of Syrah and Mourvèdre. But production is anything but casual. The farm follows biodynamic practices, with legume cover crops planted between the vines to replenish nitrogen and encourage microbial activity. The Hegartys also collect rainwater, lower in pH to increase the efficiency of biodynamic preparations. And vines are pruned using a non-invasive method (Simonit & Sirch) to encourage health and resist disease. The Minervois site is equally special. High altitude and clay soils both offset the heat of the Languedoc. Vines up to 75-years-old root deeply, resulting in rich and fruity aromas. Low sulphur too.
