At only 35, Anne-Sophie Dubois is part of the young generation of vignerons re-defining the identity of Beaujolais. Aiming for deeper flavors than the typical light & fruity style, she prefers whole cluster fermentation over the traditional carbonic maceration. While both methods press intact bunches of grapes, whole cluster fermentation allows oxygen during the fermentation that enhances the earthiness of Dubois’ noted wines.
