Federico Orsi’s biodynamic farm in Colli Bolognesi, near Bologna. His frizzante wine, made from the local Pignoletto grape, features bright apple and lemon notes, with a yeasty aroma and a hint of minerality. A second fermentation in the bottle adds natural fizz, resulting in a refreshing finish.Federico’s farm also supplies local restaurants with vegetables and Mortadella from free-roaming Mora Romagnola pigs.
