Organic 75-year-old Palomino vines in limestone soils. Young white from the fermentation in stainless steel of the first bud of the Palomino Fino grape from the Matalian estate, controlled spontaneous fermentation between 25-18º, thus wanting to obtain the maximum splendor of the primary aromas. The result is a balance between the primary aromas (white stone fruit, citrus aromas) and the subtlety of the reflection of the albariza soil, with the fine palomino variety as the guiding thread.
