Starting in the 1990's, ex-sommelier and visionary Cedric Bouchard embraced what was then a revolutionary philosophy: single-vineyard, single-variety (Pinot Noir, Chardonnay or Pinot Blanc), single-vintage, zero-dosage Champagnes. 30 years later, many have followed his lead but few coax the incredible nuance and complexity out of these 40-year-old vines. Val Vilaine is 100% Pinot Noir from the 1.5 hectare lieu-dit of Val Vilaine. This bright, vinous and citrus-centric bottling is the perfect introduction to the Bouchardian style. 300-500 cases produced annually.
