Tom Lubbe’s journey from South Africa to Roussillon is the stuff of natural wine legend. After cutting his teeth with Louise Hofmeyer, a pioneer in indigenous yeast winemaking, a short stint at Domaine Gauby turned into three years—and a marriage to Nathalie Gauby. At Domaine Matassa, Tom champions old vines of Catalan varieties like Carignan, Grenache, and Macabeu, farming biodynamically on schist, marl, and black slate soils. His wines start with the soil and end in fiberglass tanks to keep the focus on terroir. Named after Nathalie’s grandmother, Cuvée Marguerite is a blend of century-old vines, whole-cluster fermented in concrete, and aged on lees in 2500L foudres
