From Marsannay in Burgundy, Sylvain Pataille tends to some of the region’s rarest Aligoté Doré grapes—these pre-clonal vines are over fifty years old. Farming organically and biodynamically, he treats this humble grape like it’s Grand Cru–level, gently pressed, fermented with native yeasts, and aged for a year in mostly large foudres with a touch in older barrels .  The wine is bright and textured, showing citrus, green apple, and a touch of white pepper, with a long, mineral-driven finish. It’s lively and precise, offering a fresh, distinctive expression of Burgundy that overdelivers for its humble name.  Pair it with chicken almond stir-fry or other aromatic, flavorful dishes.
