Sourced from two picturesque vineyards in the Piccadilly Valley, nestled behind Mount Lofty, this wine features grapes from a high-elevation block (550m) and Sam Virgara’s Chapel Valley vineyard, planted in the early 1990s. Grapes are meticulously handpicked over several weeks and divided into small open fermenters, each with varying whole bunch inclusions and maceration lengths. With just 10% new oak, the wine benefits from a long, cool ripening season, resulting in an ethereal perfume, light structure, and exceptional natural acidity.
