We’ve never had a Cabernet Franc so inexpensive and so good. We would try to call this biodynamic wine a ‘find’. However, in doing research, I discovered that we are hardly the first to recognize the extraordinary quality of this Loire Valley Red: According to the Best Wines of France 2019, La Revue du Vin: “the entire range of Bourgueil Cabernet Franc succeeds with the Caslot family, who have climbed to the top of their appellation. Having converted to biodynamic farming, their vineyards are now among the healthiest in Bourgueil.“ The Dyptyque is made from vines growing in gravelly, sandy, and clay-sandy soils. The name comes from the term for two painted panels linked together. According to the winemakers, “Here, with wine, it is a cuvée made with sun and soil.” The élevage is a short four to six months in concrete vats with, sometimes, a small proportion done in older barrels. Light maceration—the intent is to have an easy, supple wine. Production averages 1,500 cases.
