From Barbichette, the Brooklyn-based project of César Vega and Louisiane Remy, who work with organically farmed fruit from the Finger Lakes. “Poc à Poc” — meaning “little by little” — is a blend of Muscat and Grüner Veltliner from Seneca Lake. Whole-cluster fermented on skins for about ten days and aged in neutral oak foudre, it’s light, aromatic, and dry with notes of grapefruit, jasmine, and citrus peel. No fining, no filtration, and minimal sulfur. Fresh, textured, and quietly distinctive — New York fruit made with a natural French touch.
