He began working with his father, Jean, in the mid-1980s, and by 1991 had taken full direction of the domaine, alongside his wife Nadine and sister Béatrice. Today the estate covers about 15 hectares, producing roughly 60,000 bottles each year — a modest output by Burgundy standards. Jean-Marc has modernized with care: a new cellar, expanded vineyard holdings, and thoughtful refinements in vinification, all without losing the domaine’s classical style. The 2023 vintage is exceptionally limited — low yields across Burgundy combined with strong global demand mean allocations are smaller than ever. Pillot’s wines, already highly sought after, have become even harder to secure this year.
