In Umami we trust. A Japanese winemaker working in New Zealand, Yuki Nakano is known for his ultra-attentive, delicate style, with the sensitivity as if he were making sake instead of wine. Before moving to New Zealand (where he works as assistant winemaker for Kindeli Wines), he made a couple of vintages in Japan and the Barossa Valley in Australia. Grapes for this natural wine are left on the skin for two weeks, giving it tight grip, fine tannins, and a beautiful amber color. No filtering, fining, or additives.
