Sheep manure, indigenous yeasts, hand harvesting all contribute to this special organic Spanish red. But what really sets apart Valduero's fanciest cuvee, made only in exceptional years, is its ageing: 36 months in barrels of four different types of oak followed by another 3 years in the bottle before release. The result is a dark, intense purple with aromas of coffee and hints of cedar. Rich and lush, its finish is also long and persistent. A perfect accompaniment to game, lamb and cured cheeses.
