Jaime Villalobos Sauza, a fifth-generation Maestro Tequilero from the Sauza family, is reshaping tradition at Hacienda de Oro in Amatitán, tequila’s historic heart. Honoring the methods of past generations, he keeps it simple—just agave, water, and wild yeast. Each batch ferments naturally, bringing subtle variations with every release. Right now, the focus is on the essence of the spirit: an unaged, expressive blanco. Slow baking draws out deep aromatics and concentrated flavors, while ambient fermentation gives the tequila more texture and complexity. Beyond the craft, Jaime and his team are investing in the people behind it, creating a foundation to support the women who work at the distillery.
